Maple Black Peppercorn Pork Roast

What You Need:

1 3 pound(s) Center Cut Pork Roast 2 1 cup(s) Grade A Maple Syrup
3 3 tablespoon(s) Crushed Black Peppercorn 4 5 small Shallots
5 6 clove(s) Garlic 6 1 bottle(s) Dark Beer
7 2 tablespoon(s) Salt 8 2 tablespoon(s) Oil Olive

How to Do It:

Marinade Center Cut Pork roast in a bottle of dark beer, minced garlic, bay leaves. Keep it refigarated overnight.

Preheat oven to 370 °F. In the meantime pour 1 tablespoon of oil olive to large frying pan and set over medium-high heat. Place the pork and fry on each side for few minutes until each side is golden brown.

Finely chop fresh rosemary, thyme. Crush about 1 tablespoon of black peppercorn. Combine everything in medium ball and add 1 tablespoon of oil olive, 2 tablespoons of mape syrup. Mix all toghether and use it to rub the pork roast.

Place pork roast in the oven for 1h and 30 minutes. To keep it moist keep on adding leftover pork marinade.

At the end dice shallots, thyme. Place it in small frying pan over medium heat. Fry for few minutes until shallots become translucent. Add 1/2 cup of Maple syrup and 1 tablespoon of crushed black pepprcon. Simmer for couple more minutes and poor over the pork roast.

Serve with baked potato halves or side of your choice!
