Broccoli Carrot Stuffed Meatballs

1 1 pound(s) 90% Lean ground beef 2 2 Eggs
3 4 medium Carrots 4 1 cup(s) Shredded Taco cheese
5 2 large Broccoli Crowns 6 2 tablespoon(s) Olive Oil
7 1 large Jar of red pasta sauce 8 1/2 cup(s) Grated Parmesan cheese
9 2 cup(s) water 10 1 tablespoon(s) Salt
11 1 tablespoon(s) Black pepper

How to Do It:

Broccoli crowns and carrots have to be shredded in a food processor. Combine the ground meet with previously shredded vegetable mix, add eggs, olive oil, taco cheese and spices and mix well. Shape mixture into medium size balls.
Preheat the oven to 350 degrees F and grease the dish with oil. Place previously prepared meatballs into baking dish and bake for about 20 minutes.
Meanwhile pour red pasta sauce in large frying pan add water, bring it to boil. Set heat to medium-high. Transfer meatballs after 20 minutes of baking. Cook for about 15 more minutes. Sprinkle with grated parmesan cheese. Enjoy!
